Food, an integral part of man’s way of life, has seen great changes from the beginning of man. From simple food ingredients such as salt used from the dawn of man to preserve food for long periods of time, to this era where multiple new food additives are used for food longevity, flavor, claimed health benefits, color, texture and smell to name a few. Food is being processed more than ever to our ever-changing demands. While these customer preferences are met by this day and age food manufacturing companies, there is less nutritional value in today’s food then in the past and there has been concerns over the effect of these processed foods for man’s health.
What is considered processed food? Unprocessed food consists of fresh fruits, vegetables, and milk whereas processed food includes processed cooking ingredients, processed foods that can be eaten with little preparation from out of a can or canned fish, cheese, and fresh bread. Finally, there is the highly processed foods that have additives such as sweeteners, processed fats, artificial coloring, texture, taste, claimed health benefits. These foods are usually readymade or have few preparation steps requirements. Where food used to be processed with the true ingredients to manage health benefits, these ingredients are all being replaced with food additives, such as only sweeteners and no sugar in products, flavors and enhancers rather than flavor causing ingredients, fat replacers instead of monitoring the fat used in a product. Instead of using food ingredients, in its entirety, that provide the benefits to the food, food manufacturers are cutting out parts of these food ingredients and replacing them with food additives to benefit our tastebuds more than our bodies.
Studies have started to show correlation between food additives and the effect on people’s health. A correlation between children and processed food has been shown with various health concerns in the last 20 years. Food scientists and chemists have done much in advancing the food industry, especially providing society with alternatives for those who have allergic reactions to specific ingredients or are avoiding specific ingredients. However, one must consider the amount of food additives that have been seen in everyday products for the community, how many additives are in each food product and what is the long-term effect it will have on the human body. 22 years ago, food ingredients started being introduced into the market through the overuse of GRAS “Generally Recognized as Safe” designation that allows for the food additive to not get approval from The US Food and Drug Administration but to still be allowed to be added into processed food products. GRAS was introduced in 1958 and meant to be used sparingly for few household ingredients. Since 2000 at least 1000 food additives have been approved under GRAS without enough research being done to show long term effects of these food additives in processed food products.
The food manufacturing industry of now needs to catch up with the food manufacturing industry of the 2000s while the repercussions of food additive overuse is starting to show in society’s diet and health.
